cordial
[I’ve used elderflower, lime tree blossom, meadowsweet]
Makes 1 litre
○ enough flowers to fill a large bowl
○ 1kg sugar
○ 2 lemons, sliced
○ 50g citric acid
Lay out flowers on a flat surface and remove any insects (don’t wash as this will remove flavoursome blossom).
Place the flower heads in a large bowl together with the sliced lemons and citric acid.
Pour over 1 litre boiling water, cover and leave overnight to infuse.
Strain the liquid through a piece of muslin and pour into a saucepan. Add sugar.
Heat gently to dissolve the sugar, then bring to a simmer and cook for a couple of minutes.
Use a funnel to pour the hot syrup into sterilised bottles.
Store in cool dark place and then pop in fridge once opened.
